This rich and creamy eggnog is an adaptation of the Puerto Rican "Coquito" combined with a traditional egg nog base.

Coconut eggnog is rich, creamy and sweet and has the potential to make you happily tipsy at the same time.

5 large egg yolks
1 cup coconut milk
1 cup coconut cream
1/2 cup sweetened condensed milk
1 cup white rum
2 tablespoons white sugar
1 tablespoon vanilla extract
1/2 teaspoon ground nutmeg

In a bowl, whisk the egg yolks with the vanilla extract and set aside
Into a large saucepan, pour the coconut milk, coconut cream and sweetened condensed milk. Heat mixture till you see small bubbles forming on the surface but do not allow it to boil.  Remove saucepan from heat and add immediately the egg yolk mixture and the ground nutmeg into the heated milk mix, whisking it briskly as you add.

Allow the contents of the saucepan to cool to room temperature before stirring in the white Rum.

Transfer to a pitcher and refrigerate until well chilled.  Serve with an extra pinch of nutmeg if desired.
